I hope everyone had an amazing Easter Sunday! I was so excited that I woke up at 8am and hid Easter eggs around my apartment for my boyfriend with little coupons inside them that said things like, “Bae will wash dishes for one night” or “Bae gets control of the remote for one day”. It was simple but something fun for us to share together!
I went to the gym and got in a great workout and sat in the sauna before heading home to make my protein shake for breakfast.
I was super egg-cited (ha) to make a dish to bring to my grandparents house. I decided to make a pasta salad that would be healthier for the fam!
What I love about the Barilla Lentil Pasta is if you compare it to a Gluten Free Fusilli Corn & Rice blend is the calories are less, the carbs are less, but the protein is HIGH! 13g of protein in the Barilla lentil pasta vs. the Simply Balanced fusilli pasta with only 3g of protein!
I wanted to make a caprese pasta salad so I boiled the noodles, like you would regular pasta noodles, and then let them sit to cool down. While the pasta noodles cooled down I prepared the sliced heirloom tomatoes, mozzarella pearls, diced basil, and sliced cucumber. To make the dressing I used 1/4 cup of olive oil and balsamic vinegar, 3 table spoons of honey (warmed), and salt for taste and mix!
BTW – my family loved the salad and couldn’t tell the difference between the noodles!
Another egg-citing part of Easter is dressing up! I love to dress up and never miss an opportunity to buy a new top or outfit!
I loved this outfit I wore! The top is from Zara, the jeans are from Express, and the heels are from a shop in Paris! Usually my style is very dark colors and neutrals but with spring in the air and the sun being out I was inspired to wear this lighter outfit! I felt so cute and girly and kept my makeup simple!
