I Meal Prepped with My Boyfriend and it Made Us Closer!

Guess what! Well, I’m sure you can guess by the title of this post but….

My boyfriend and I have a solid relationship and he supports my weight loss journey like none other. He on the other hand, has been struggling to find a routine that works for him. We decided to try meal prepping together since I already do mine on Sundays and he sees how effective (and easy) it is for me to grab-and-go every morning when I head to work.

We discussed recipes we wanted to try and I came upon a recipe for Butternut Squash Mac-n-Cheese that I thought looked delicious! We’re both trying to cut out dairy due to inflammation problems. We decided to do mac-n-cheese and roasted veggies on the side!

We went to Target and bought butternut squash for the mac-n-cheese (luckily I already had many of the ingredients at home), and gluten free fusilli pasta (because why not gluten free?), then we decided to double up on the veggies we were going to roast since we were splitting them. We got: sweet potatoes, green bell peppers, zucchini, yellow squash, and carrots.

We paid for our groceries (we split them between the two of us and paid separately) and headed home. The best part was we worked as a team. He helped cut the butternut squash (I workout but it takes a little more muscle then I have so far) and diced the sweet potato! I made the “cheese” sauce for the mac-n-cheese and laid out the veggies we wanted to roast on a baking sheet and put them in the oven.

The butternut squash mac-n-cheese was super easy and came out looking delicious!!

I mean really? Look at the calories and sodium! Sodium is a big deal for me because my body retains water easily so I’m constantly chugging water to flush it out!

We got a late start cooking and were running the dishwasher at the same time which had the containers I typically use for the week so I decided to section off all the veggies into containers. During the week my boyfriend just has to grab a plate and buffet style what he wants onto it!

I made a container for myself to take for lunch the next day but look how much is left over!!

The biggest take aways from this experience are the following:

When you’re doing a chore TOGETHER it feels less like work. Going grocery shopping and meal prep are part of my weekend routine but can sometimes feel daunting when doing it alone. Having my boyfriend come along with me to pick out the foods we would be eating that week made it feel less like work and more like fun and something to bond over.

Having him help cut and prep some of the veggies cut my prep time in half and made it easier for me to multi-task! It also made me feel at ease that I wasn’t in a rush to get everything done and cleaned up because we were doing it together. Now we have so much food for the week! We definitely over analysed how much food we would need and bought way too much! Good note for next time, buy less! It’s a learning experience and one I hope we continue to do weekly together!

When you cook food at home you have more appreciation for it instead of going out and buying fast food. It’s also healthier because you know what you are putting into a recipe and into your body! This has really been a game changer in my weight loss journey!
